Method
 

Preparation
  1. Grate the cucumber and toss with salt. Let sit for 10 minutes, then squeeze out all excess liquid.
Cooking
  1. Combine grated garlic with lemon juice and let sit for 5 minutes.
  2. In a bowl, whisk together Greek yogurt, garlic-lemon mixture, olive oil, salt, and black pepper until smooth.
Serving
  1. Fold in the drained cucumber, dill, and mint until evenly incorporated. Taste and adjust salt or lemon juice as needed.
  2. Cover and refrigerate for at least 1 hour to allow flavors to develop.
  3. Drizzle with extra virgin olive oil and garnish with additional herbs if desired.

Notes

Tzatziki sauce is perfect for summer gatherings and can be made ahead of time. For variations, consider adding jalapeƱos for heat or swapping herbs.
