  • 1 onion, diced
  • 2 bell peppers, diced Any color bell peppers can be used.
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes Make sure to drain the excess liquid.
  • 1 cup cooked rice Use white or brown rice as preferred.
  • 1 teaspoon Italian seasoning You can adjust the spice level to taste.
  • to taste Salt and pepper Season according to your preference.
  • 1 cup shredded cheese (optional) Recommended for a creamy topping.

Preparation
  1. In a large skillet, brown the ground beef over medium heat. Drain excess fat.
  2. Add the diced onion and bell peppers to the skillet and sauté until softened.
  3. Stir in the minced garlic and cook until fragrant.
  4. Add the diced tomatoes, cooked rice, Italian seasoning, salt, and pepper. Stir well to combine.
  5. Serve hot, topped with shredded cheese if desired.

Notes

For a creamier dish, add a dollop of sour cream before serving. Leftovers can be stored in the fridge for up to three days or frozen for up to three months.
