  • 1 lb ground beef or turkey
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium bell peppers, diced (any color)
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup rice (white or brown)
  • 2 cups beef or chicken broth
  • 1 tsp Italian seasoning
  • to taste salt and pepper Optional for seasoning
  • to taste shredded cheese for topping Optional

Method
 

Preparation
  1. In a large skillet, brown the ground beef or turkey over medium heat. Drain excess fat to keep it healthy.
  2. Add diced onion and minced garlic to the skillet. Cook until the onion is translucent.
  3. Stir in diced bell peppers and let them cook for another 3-5 minutes until softened.
  4. Add diced tomatoes, rice, broth, Italian seasoning, salt, and pepper. Stir well.
  5. Bring to a boil, then reduce heat to low and cover. Simmer for 20-25 minutes until rice is tender.
  6. Remove from heat and top with shredded cheese, if desired. Serve hot.

Notes

For a richer dish, stir in a dollop of sour cream or cream cheese just before serving. This meal can easily be doubled for meal prep. Store leftovers in the fridge for up to three days or freeze for later. Customize with your favorite spices and veggies.
