Preparation
- In a large pot, melt the vegan butter over medium heat.
- Add the diced onion, carrots, and celery; sauté until softened, about 5 minutes.
- Stir in the plant-based chicken substitute and cook for another 3-4 minutes.
- Add the vegetable broth and almond milk, then bring the mixture to a boil.
Dumpling Preparation
- In a bowl, combine flour, baking powder, salt, and pepper.
- Gradually mix in enough water to form a soft dough.
- Drop spoonfuls of dumpling dough into the boiling soup.
Cooking
- Cover and simmer for about 15 minutes or until the dumplings are cooked through.
- Season with additional herbs and spices as desired and garnish with fresh herbs.
- Serve warm.
Notes
For the best flavor, sauté the vegetables long enough and avoid dropping large dumplings into the soup. Add fresh herbs at the end for enhanced flavor.
