Vegan Chicken and Dumplings

Ingredients
  

For the soup base
  • 2 tbsp Vegan butter Can use olive oil as an alternative.
  • 1 cup Diced onion
  • 1 cup Diced carrots
  • 1 cup Diced celery The holy trinity of flavor.
  • 2 cups Vegetable broth Homemade is best, but store-bought is fine.
  • 1 cup Almond milk Can substitute with any plant milk.
  • 1 package Plant-based chicken substitute Tofu or tempeh can be used instead.
  • 1 tbsp Garlic powder
  • 1 tbsp Onion powder
  • Salt to taste
  • Black pepper to taste
For the dumplings
  • 2 cups All-purpose flour For a gluten-free option, use GF flour blend.
  • 1 tbsp Baking powder Leavening agent for light dumplings.
  • Salt to taste
  • Black pepper to taste
  • Water as needed To form a soft dough.
For garnishing
  • Fresh herbs like thyme or parsley Adds flavor and freshness.

Method
 

Preparation
  1. In a large pot, melt the vegan butter over medium heat.
  2. Add the diced onion, carrots, and celery; sauté until softened, about 5 minutes.
  3. Stir in the plant-based chicken substitute and cook for another 3-4 minutes.
  4. Add the vegetable broth and almond milk, then bring the mixture to a boil.
Dumpling Preparation
  1. In a bowl, combine flour, baking powder, salt, and pepper.
  2. Gradually mix in enough water to form a soft dough.
  3. Drop spoonfuls of dumpling dough into the boiling soup.
Cooking
  1. Cover and simmer for about 15 minutes or until the dumplings are cooked through.
  2. Season with additional herbs and spices as desired and garnish with fresh herbs.
  3. Serve warm.

Notes

For the best flavor, sauté the vegetables long enough and avoid dropping large dumplings into the soup. Add fresh herbs at the end for enhanced flavor.
