  • 1/4 teaspoon sea salt Balances sweetness.
  • 1 tablespoon brandy (optional) Adds depth, can be omitted.
French Toast Ingredients
  • 8 slices vegan sandwich bread Thick slices preferred.
  • 2 tablespoons vegan butter or oil For cooking.
  • extra to taste cinnamon For sprinkling on top.
  • to serve as needed maple syrup For drizzling.
  • to serve as needed vegan whipped cream For topping.

Method
 

Preparation
  1. Add soaked cashews, vegan milk, flax meal, maple syrup, vanilla extract, cinnamon, nutmeg, sea salt, and brandy to a blender.
  2. Blend on high until smooth and creamy.
  3. Pour the blended mixture into a shallow dish, cover, and refrigerate for 15 minutes.
Cooking
  1. Heat a skillet or griddle over medium heat and melt 1 tablespoon of vegan butter or oil.
  2. Dip each slice of bread into the custard, soaking for 10-15 seconds per side.
  3. Place the soaked slices onto the hot skillet and cook for 3-4 minutes per side until golden brown and crisp.
Serving
  1. Stack warm French toast slices on plates.
  2. Drizzle with maple syrup, sprinkle with extra cinnamon, and top with vegan whipped cream.

Notes

Soaking cashews is crucial for creaminess. Modify spices to your taste, and follow resting times for optimal texture.
