Ingredients
  

Main Ingredients
  • 1 cup raw cashews Soak them for a few hours for a smoother texture.
  • 3/4 cup fresh water Adjusts the dressing thickness.
  • 3 cloves garlic (peeled) Can be substituted with garlic powder.
  • 1 tablespoon lime or lemon juice Necessary for that zesty kick.
  • 1/2 teaspoon dried onion May substitute with fresh onion.
  • 1 teaspoon dried chives Can be replaced with scallions.
  • 1/4 teaspoon freshly ground black pepper Add according to taste.
  • 1 1/2 tablespoons fresh dill (chopped) Can be omitted for simpler flavors.
  • 1/2 teaspoon sea salt Taste and adjust as necessary.

Method
 

Preparation
  1. Soak raw cashews in a bowl of water for at least 4 hours or overnight for creamier dressing.
  2. Drain the soaked cashews and place them in a high-speed blender.
  3. Add fresh water, garlic, lime or lemon juice, dried onion, chives, black pepper, dill, and salt to the blender.
  4. Blend the mixture on high speed until completely smooth and creamy, at least for 2 minutes.
  5. If needed, adjust the consistency by adding more water for a runnier dressing.
  6. Adjust seasoning to taste by adding more salt or lime/lemon juice if necessary.
  7. Let the dressing sit at room temperature for 15 minutes before serving.

Notes

Store in an airtight container in the fridge for up to one week. Shake or stir before serving. Can be frozen in portions and thawed overnight in the refrigerator.
