Preparation
- Soak raw cashews in a bowl of water for at least 4 hours or overnight for creamier dressing.
- Drain the soaked cashews and place them in a high-speed blender.
- Add fresh water, garlic, lime or lemon juice, dried onion, chives, black pepper, dill, and salt to the blender.
- Blend the mixture on high speed until completely smooth and creamy, at least for 2 minutes.
- If needed, adjust the consistency by adding more water for a runnier dressing.
- Adjust seasoning to taste by adding more salt or lime/lemon juice if necessary.
- Let the dressing sit at room temperature for 15 minutes before serving.
Notes
Store in an airtight container in the fridge for up to one week. Shake or stir before serving. Can be frozen in portions and thawed overnight in the refrigerator.
