Ingredients
  

Base Ingredients
  • 1 cup raw cashews Use fresh cashews.
  • 1/2 cup ice water Adjust for desired thickness.
  • 1 teaspoon Diamond Crystal kosher salt Enhances the flavors.
  • 2 tablespoons fresh lemon juice Brightens the flavor.
  • 1 clove garlic Infuses savory depth.
  • 2 tablespoons extra-virgin olive oil Provides richness.
  • 1 tablespoon maple syrup Adds a touch of sweetness.
Finishing Touches
  • 2 tablespoons chives Fresh, chopped.
  • flaky sea salt Optional, to taste.

Method
 

Preparation
  1. In a high-speed blender, combine the cashews, ice water, salt, lemon juice, garlic, olive oil, and maple syrup.
Blending
  1. Blend at low speed for 10 seconds, then increase to the highest setting and blend for another 50 seconds.
  2. Taste the mixture and adjust with a pinch of flaky sea salt if necessary.
Finishing
  1. Add the chopped chives and blend on low for another 10 seconds.
  2. Transfer the dressing to a storage vessel and refrigerate for at least 2 hours before using.
  3. If needed, thin the dressing with another tablespoon of water for a pourable consistency.

Notes

This dressing can be served cold or at room temperature. It lasts in the refrigerator for up to one week in an airtight container.
