- Fold in shredded cheddar cheese and chopped vegetables until evenly combined.
- Evenly distribute the creamy veggie filling onto the lavash bread sheets or flour tortillas.
- Roll tightly from the short end to form logs.
- Place the roll-ups seam-side down in an airtight container and refrigerate for at least 2 hours.
- Cut the chilled rolls into 1/2 to 3/4-inch pinwheels before serving.
