Preparation
  1. In a large bowl, combine the diced watermelon, crumbled feta cheese, chopped mint leaves, and sliced red onion. Gently toss these ingredients together until evenly mixed.
  2. In a small bowl, whisk together the olive oil and balsamic vinegar until well emulsified.
  3. Drizzle the dressing over the salad and toss gently to combine, ensuring that all components are well coated with flavor.
  4. Season with salt and pepper to taste, adjusting as necessary.
  5. Transfer the watermelon salad to a serving bowl and chill in the fridge until ready to serve.

Notes
