Method
 

Stovetop Preparation
  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion, garlic, and bell pepper until tender.

  4. Mix in the tomato paste and spices. Stir until everything is well coated.
  5. Add the beans and chicken broth. Bring to a gentle boil.
  6. Reduce heat, add the bay leaf, and let simmer for 20-30 minutes, stirring occasionally.
  7. Adjust seasoning to taste, remove the bay leaf, and serve with your favorite toppings.
Slow Cooker Preparation
  1. In your slow cooker, combine all ingredients except for the sour cream and toppings.
  2. Stir everything until well mixed.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours until heated through.
  4. Before serving, stir in sour cream or Greek yogurt for creaminess.
