  • 1/4 cup feta cheese (optional) Creamy and salty, or substitute with goat cheese.
Dressing Ingredients
  • 1/4 cup fresh lemon juice Bottled lemon juice won’t give the same zestiness.
  • 1 tablespoon poppy seeds Chia seeds can substitute if necessary.
  • 1/2 cup olive oil Avocado oil is a light alternative.
  • 2 tablespoons honey or maple syrup Agave syrup can also be used for a vegan option.
  • to taste Salt and pepper Adjust based on your preferences.

Preparation
  1. In a large bowl, combine the mixed greens, apples, pears, pomegranate seeds, kiwi, and nuts.
  2. In a separate small bowl, whisk together the lemon juice, poppy seeds, olive oil, honey, salt, and pepper.
  3. Drizzle the dressing over the salad before serving and toss gently to combine.
  4. Top with feta cheese if desired.

Notes
