Ingredients
  

Wet Ingredients
  • 1 3/4 cups whole milk
  • 8 tablespoons unsalted butter (cut into small pieces) Plus, more for greasing the waffle iron
  • 2 large eggs
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 2 cups all-purpose flour (10 ounces)
  • 1 tablespoon sugar (or coconut sugar)
  • 1 1/2 teaspoons rapid-rise yeast (1 package)
  • 1 teaspoon Kosher salt

Method
 

Preparation
  1. In a small saucepan over medium heat, place the milk and butter. Stir occasionally until the butter melts, then set aside to cool.
  2. In a mixing bowl, combine the flour, sugar, yeast, and salt.
  3. In a small bowl, whisk the eggs and vanilla extract together until smooth.
  4. Gradually pour the warm milk and butter mixture over the dry ingredients, whisking to combine until you have a silky batter.
  5. Add the egg and vanilla mixture, whisking until the batter is completely smooth.
  6. Cover the bowl with stretch film and place it in the fridge to rest overnight (or up to 24 hours).
Cooking
  1. Preheat your oven to 200°F to keep the cooked waffles warm.
  2. Heat the waffle iron and brush it with butter or oil spray.
  3. Pour half a cup of batter into the waffle iron and cook until golden brown.
  4. Carefully remove the waffle and place it flat on a baking sheet to prevent sogginess.
  5. Serve topped with fresh fruits, maple syrup, or whipped cream.

Notes

Letting the batter rest overnight is crucial for fluffy waffles. Experiment with different toppings and variations to suit your taste.
