Method
 

Preparation
  1. Preheat your oven to 400° F. Spray a 9x13 glass dish with nonstick cooking spray and set it aside.
  2. Grate the zucchini until you have 4 cups. Sprinkle it with salt and let it sit for 10 minutes to draw out moisture.
  3. Using a clean tea towel, ring out the zucchini to remove excess water. Combine it in a bowl with black pepper, eggs, 1 cup of mozzarella cheese, 1 cup of cheddar cheese, and the grated parmesan. Stir thoroughly to combine.
Baking
  1. Spread the zucchini mixture evenly into the prepared baking dish and bake for 20 minutes.
  2. Remove from the oven and layer it with pizza sauce, the remaining mozzarella cheese, pepperoni, and any other desired toppings.
  3. Bake for an additional 15 minutes, then remove from the oven. Top with fresh basil before letting it cool for 5 minutes before slicing and serving.

Notes

To avoid a soggy dish, ensure to squeeze out the excess moisture from the zucchini. Allow the casserole to cool before slicing to maintain its shape.
