This juicy chicken gyro recipe uses a yogurt-lemon marinade to infuse every bite with flavor, wrapped in warm pita with tzatziki and crisp veggies.

Ingredients
  

  • 1.5 lbs boneless skinless chicken thighs
  • 1/2 cup plain Greek yogurt
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 4 pita breads
  • 1 cup tzatziki sauce
  • 1/2 cup sliced red onion
  • 1 cup sliced cucumber
  • 1 cup diced tomato

Equipment

  • grill or skillet to cook the chicken
  • Mixing bowl to make the marinade
  • Knife for slicing vegetables and chicken

Method
 

  1. Mix yogurt, lemon juice, olive oil, garlic, cumin, paprika, oregano, salt, and pepper in a bowl.
  2. Add chicken and coat well. Marinate for at least 1 hour (preferably overnight).
  3. Grill or pan-fry the chicken until golden and cooked through. Let rest, then slice.
  4. Warm pita, then assemble with chicken, tzatziki, red onion, cucumber, and tomato.

Notes

For best results, marinate the chicken overnight. Always slice against the grain for tender texture.
