- In a large skillet, warm the olive oil over medium-high heat.
- Add the bite-sized chicken pieces and season evenly with salt and pepper. Sauté for about 5 to 7 minutes, stirring and flipping intermittently, until the chicken is cooked through.
- In a small bowl, combine the honey and both mustards, and taste to adjust the flavor with more honey or mustard as needed.
- Pour the honey mustard sauce into the skillet with the chicken.
- Reduce the heat to medium-low, and stir to coat all chicken pieces. Allow it to simmer in the sauce for about 2 to 3 minutes.
- If a thicker sauce is desired, add the cornstarch slurry and stir constantly for 1 to 2 minutes, until thickened.
- Garnish with fresh parsley if desired, and serve immediately.
Notes
Avoid overcrowding the skillet to achieve perfect golden browning. Allow the honey and mustard mixture to sit for a few minutes before adding to enhance flavor fusion. Ensure chicken reaches an internal temperature of 165°F (75°C) for safety. Consider adding a splash of apple cider vinegar to the sauce for balance.
