Ingredients

Main Ingredients
  • 2 tablespoons olive oil Essential for cooking the chicken and adding richness to the dish.
  • 1 pound boneless skinless chicken breasts (or thighs) The primary protein, ensuring a juicy and satisfying meal.
  • 1 teaspoon kosher salt Enhances flavor; adjust to taste.
  • 1 teaspoon freshly ground black pepper Adds a mild spiciness to complement the dish.
Sauce Ingredients
  • 1/4 cup honey Provides sweetness and depth to the sauce.
  • 2 tablespoons yellow mustard Offers a tangy flavor that pairs perfectly with honey.
  • 2 tablespoons dijon mustard Adds a sharper flavor and complexity to the sauce.
  • 1 tablespoon cornstarch Used to thicken the sauce, if desired.
Garnish
  • 2 tablespoons fresh parsley For garnishing, adding a touch of color and freshness.

Method

Preparation
  1. In a large skillet, warm the olive oil over medium-high heat.
  2. Add the bite-sized chicken pieces and season evenly with salt and pepper. Sauté for about 5 to 7 minutes, stirring and flipping intermittently, until the chicken is cooked through.
  3. In a small bowl, combine the honey and both mustards, and taste to adjust the flavor with more honey or mustard as needed.
  4. Pour the honey mustard sauce into the skillet with the chicken.
  5. Reduce the heat to medium-low, and stir to coat all chicken pieces. Allow it to simmer in the sauce for about 2 to 3 minutes.
  6. If a thicker sauce is desired, add the cornstarch slurry and stir constantly for 1 to 2 minutes, until thickened.
  7. Garnish with fresh parsley if desired, and serve immediately.

Notes

Avoid overcrowding the skillet to achieve perfect golden browning. Allow the honey and mustard mixture to sit for a few minutes before adding to enhance flavor fusion. Ensure chicken reaches an internal temperature of 165°F (75°C) for safety. Consider adding a splash of apple cider vinegar to the sauce for balance.
