Combining Ingredients
- Once the spaghetti is cooked, reserve some pasta water and drain the rest.
- Add the hot pasta to the pan with pancetta and remove from heat.
- Quickly mix in the egg mixture, adding reserved pasta water as needed to create a creamy sauce.
- Serve immediately, garnished with extra cheese and pepper.
Notes
Serve with a side salad for a complete meal. Be careful not to scramble the eggs when mixing them with the pasta.
